Cornmeal Cheese Muffins
Savory muffins are wonderful both at breakfast and as a dinner bread, and I like the combination of corn with the flavorful cheese. You can also toast up slices and spread it with cream cheese as hors d’oeuvres.

Start to finish: 30 minutes
1/2 cup brown rice flour
1/3 cup potato starch
3 tablespoons tapioca flour
1 cup yellow gluten-free cornmeal
1 tablespoon gluten-free baking powder
1 tablespoon granulated sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon xanthan gum
1 cup buttermilk, shaken well
1 large egg
5 tablespoons unsalted butter, melted
1 cup grated cheddar cheese, divided
1. Preheat the oven to 400°F, and grease a 12-cup muffin pan; you can also use paper liners and spray the top of the pan with vegetable oil spray.
2. Combine rice flour, potato starch, tapioca flour, cornmeal, baking powder, sugar, salt, baking soda, and xanthan gum in a large mixing bowl, and whisk well. Add buttermilk, egg, butter, and 2/3 cup cheese. Stir gently to wet flour, but do not whisk until smooth; batter should be lumpy. Fill each prepared cup 2/3 full, and sprinkle with remaining cheese.
3. Bake muffins for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Place muffin pan on a cooling rack for 10 minutes, then serve—either hot or at room temperature.
Variations
Substitute jalapeño Jack for the cheddar cheese for a spicy, Southwestern muffin, and add 1/4 teaspoon cayenne to the batter.
Add 3/4 cup crumbled cooked bacon and 1/2 cup finely chopped scallions to the batter.
Add 1 tablespoon Italian seasoning and 1 garlic clove, peeled and pushed through a garlic press to the batter.
Vegetable oil spray is a wonderful way to keep foods like cheese from becoming permanently bonded to your pans, but it also has a tendency to coat the counters. Open your dishwasher, and place the pan to be coated on the open door before you spray it. That keeps the counters clean, and any excess spray washes away the next time you use the dishwasher.
